Dining at the Retreat at Sunny Vista

Engaging Meals

Sunny Vista brings fun and engaging meals to our residents. At our memory care and assisted living community, the Retreat at Sunny Vista, we have two dining venues for residents to pick from. Whether enjoying a full-service dining experience in the Pike’s Peak restaurant or a casual meal in the Culebra Cafe, our chef prepared cuisine is delicious, nutritious, and made with the finest quality ingredients.The Living Center at Sunny Vista, our skilled nursing community, utilizes enhanced dining in a program called “Open Dining” From seven am until seven pm, residents may choose what they would like to eat at the time they choose without being required to eat during a set time. Every day, there is a set menu that residents can choose from at any time during the open dining room hours. There is also a Chef Special menu item that rotates daily. The Chef Special will only be served at a certain time for Breakfast, Lunch and Dinner.

The dining program here at Sunny Vista is built upon the belief that a great dining experience has a foundation of customer service. We run a restaurant style dining program with freshly made soups and desserts. We have fresh daily specials created and executed by our talented culinary team. We believe in providing residents with choice.  Our menus and daily specials travel the world of cuisine to keep the menu exciting and new. We believe in using organic and local products in our preparation as much as possible.​ We do wonderful holiday banquets to engage our residents in celebration to help enrich their lives.

Get to Know Chef Aaron Burke

Our Dining Department at Sunny Vista would not be the same without our Head Chef, Aaron Burke.

Aaron Burke was born and raised right here in Colorado Springs CO. He has been in food and beverage in the hospitality industry for more than 20 years. He has worked in every position a restaurant can offer from front of house to back of house and received his culinary degree at the top of his class from Le Cordon Bleu in Austin TX.

Him and his wife own a dance studio here in Colorado Springs (The Peak School of Dance). They have been voted on Best of the Springs multiple years in a row.  They have two beautiful little girls 6 and 3 years old. In the little free time that he has, he enjoys archery, the shooting range, and automotive work. For the peace and tranquility, he escapes the city to decompress in the mountains, with his two great dogs that love the water. They also accompany him on many creek trails around Colorado Springs.

After many restaurants and multiple hotels, he decided to shift course in his career. He started in healthcare seven years ago and found that the joy in cooking for those that paved the path for us is incredibly rewarding. He has been with Sunny Vista for almost a half a year now and he is incredibly enthusiastic about the future ahead of us.

At Sunny Vista our main goal is providing a life for our residents filled with purpose and joy. What better way to do that then through our engaging dining department? Chef Burke regularly hosts live action cooking demonstrations, where residents can learn and take part in the cooking process. The dining department will also provide special meals for big occasions and events in the community such as our life enrichment events.
